    This is a delicious and exciting salsa that is a perfect complement to BBQ chicken, fried or grilled fish, or BBQ pork.

    Ingredients
    Serves: 6 

    • 1 ripe mango, peeled and sliced 1/2cm thick
    • 2 teaspoons olive oil
    • 1/4 cup finely diced red onion
    • 2 tablespoons finely diced red capsicum
    • 1 jalapeno chilli, finely diced
    • 1 lime, juiced
    • 2 teaspoons white sugar
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground ginger

    1. Preheat the BBQ for high heat. In a mixing bowl toss mango slices with oil to coat.
    2. Lightly oil BBQ grill then place on the mango slices. Cook for 4 minutes on each side until nicely browned with grill marks.
    3. Remove mango from BBQ and cut into small cubes then transfer to a mixing bowl.
    4. Stir in onion, red capsicum, chilli, lime juice, salt, sugar and ginger.
    5. Serve at room temperature, chilled or serve hot by re-heating in a non-stick frypan.

    We loved the flavor of this. The texture was not so great. I think if I do this again, I would grill less ripe mangos rather than ripened ones - the ripe ones wanted to fall apart - or just use the mango raw. I added a little cilantro, too.
