A very hearty soup for a cold winter night. I serve it with hot garlic bread. If you are lucky enough to have leftovers it's just as good if not better the next day!

Serves: 6

  • 1 tablespoon vegetable oil
  • 1 large onion, diced
  • 2 large stalks celery, diced
  • 2 1/2 teaspoons Italian herb mix
  • 1 pinch salt and pepper, to taste
  • 1 (800g) tin Italian-style diced tomatoes
  • 5 cups (1250ml) vegetable stock
  • 2 large sweet potatoes, peeled and diced
  • 2 large carrots, sliced thin
  • 185g green beans, cut into 2cm pieces
  • 5 cloves garlic, crushed

  1. Heat oil in a saucepan over medium-high heat. Saute onion, celery, Italian herb mix, salt and pepper until tender; about 5 minutes.
  2. Stir in tomatoes with the juice, stock, sweet potatoes, carrots, green beans and garlic. Bring to a boil then reduce heat to low and simmer stirring occasionally until vegetables are tender; about 30 minutes.
