    This is a recipe for people who like banana bread and muffins. You may substitute coconut for some or all of the walnuts if you wish.

    Serves: 12 

    • 1 cup (230g) white sugar
    • 1 egg
    • 2 cups (250g) plain flour
    • 1/2 teaspoon salt
    • 1/2 cup (125ml) vegetable oil
    • 3 ripe bananas, mashed
    • 1/4 cup (30g) chopped walnuts
    • 1 teaspoon bicarbonate of soda

    1. Preheat oven to 180 degrees C. Place muffin cases in muffin tray or grease with a little butter.
    2. Mix sugar, oil and egg until creamy and light yellow. Add bananas and walnuts. Add flour, bicarbonate of soda and salt. Stir until completely smooth. Spoon the batter into the muffin tin.
    3. Bake for 30 to 40 minutes or until toothpick poked in centre muffin comes out clean.
