    Cooked chicken meat is combined with fresh peaches in this bright salad. If peaches are not in season you can use other fruit - try nectarines or cantaloupe.

    Serves: 4 

    • 2 large fresh peaches
    • 280g cooked chicken, chopped
    • 60g red onion, thinly sliced
    • 1/2 cup (125ml) French or Italian salad dressing, or as needed
    • 340g mixed salad greens
    • 60g toasted walnuts, chopped

    1. Roughly chop one of the peaches and place in a salad bowl. Add chicken and onion and toss with enough dressing to coat.
    2. Add greens and walnuts to bowl and toss to coat. Mound salad on large plate. Cut remaining peach in thin wedges and place on top to garnish.
