Summer Chicken Salad

    This is a great salad that uses cooked chicken; it can be served in a lettuce leaf, in a sandwich or just as a typical side salad.

    Serves: 12 

    • 4 cups (500g) diced cooked chicken
    • 1 cup (250g) mayonnaise
    • 1 teaspoon paprika
    • 1 1/2 cups (185g) dried cranberries, sultanas or raisins
    • 1 large stalk celery, diced
    • 2 spring onions, diced
    • 1/2 green capsicum, finely diced
    • 1 cup (90g) chopped pecans
    • 1 teaspoon salt
    • freshly ground black pepper, to taste

    Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. In a medium bowl, combine all ingredients and mix well. Adjust seasoning to taste. Chill 1 hour before serving.

    Used different ingredients. I'm on a chicken salad binge.There are many great recipes for it on this site, but this one is almost perfect.Some minced red onion makes it superb.Thanks Elaine.  -  18 Jul 2008


    Used different ingredients. This is a wonderful chicken salad recipe. I omitted the green pepper and added chopped apples and sliced grapes. I highly recommend giving this recipe a go. I'm glad I did!  -  18 Jul 2008


    I made this a dinner salad for two, sultanas soaked in orange juice, a diced carrot instead of currants and celery, no capsicum and toasted almonds served on bed of baby greens. A crunchy citrus salad, and I will experiment based on what is on hand, as I did this evening; thanks!  -  26 Aug 2012
