This is a rich apple cake served with a warm topping. Delicious! This recipe calls for walnuts but pecans are just as delicious!

Serves: 12 

  • Cake
  • 3 eggs
  • 1 1/4 cups (310ml) vegetable oil
  • 2 cups (460g) white sugar
  • 2 1/2 cups (310g) self raising flour
  • 2 apple, peeled, cored and diced
  • 1 cup desiccated coconut
  • 1 cup chopped walnuts
  • Topping
  • 65g butter
  • 1/2 cup (90g) packed brown sugar
  • 1/3 cup (80ml) milk

Preparation:15min  ›  Cook:1hour  ›  Extra time:1hour15min  ›  Ready in:2hours30min 

  1. Cake: Preheat oven to 180 degrees C. Grease and flour ring tin.
  2. Beat eggs, oil and sugar until creamy. Add flour a little at a time. Beat well. Batter will be stiff. Fold in apples, coconut and nuts.
  3. Pour into prepared cake tin. Bake in preheated oven for 60 minutes or until a toothpick inserted into the centre comes out clean. Let cool 30 minutes in tin then remove.
  4. Topping: Melt butter, sugar and milk in saucepan over high heat. Bring to boil for 3 minutes. Pour over cooled cake.
