Balsamic Chicken and Apple Salad

This is a bit like a Waldolf salad but with a balsamic vinaigrette. Great for leftover roast chicken. Serve it on a bed of green salad leaves.


Serves: 6 

  • 500g diced cold, cooked chicken
  • 1 apple, diced
  • 1 stalk celery, diced
  • 2 spring onions, chopped
  • 60g chopped walnuts
  • 3 tablespoons balsamic vinegar
  • 5 tablespoons olive oil
  • salt and freshly ground black pepper, to taste

Preparation:15min  ›  Ready in:15min 

  1. In a large bowl, toss together the chicken, apple, celery, onion and walnuts.
  2. In a small bowl, whisk together the vinegar and oil then pour over the salad. Season with salt and pepper to taste and mix well. Let rest 10 to 15 minutes, mix again and chill.

Used different ingredients. A winner in my house! Of course, I altered a bit (I adapted it for 2 people)... 1. I used 1 grilled chicken breast. 2. Diced red onion instead of green 3. Used different ingredients. This recipe is AWESOME! I used red onions instead of green and left out the celery and cheated by using a balsamic vinagrette dressing, and it turned out delish! This will be a staple in my refrigerator. - 29 Sep 2008
