Peanut Butter Cake
This is a great peanut butter cake with peanut butter icing. Ideal for the true peanut butter fan.
Ingredients

- 2 cups (250g) plain flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup smooth peanut butter
- 185g butter, softened
- 2 cups (320g) brown sugar
- 6 eggs
- 2 teaspoons vanilla essence
- 3/4 cup (190ml) milk
- Peanut Butter Icing
- 1/2 cup smooth peanut butter
- 500g icing sugar, sifted
- 1 cup (250ml) milk
- 1 teaspoon vanilla essence
- 1/2 cup chopped peanuts

- Preheat oven to 180 degrees C. Grease and flour a 23 x 33cm pan. Sift together the flour, baking powder and salt. Set aside.
- In a large bowl, cream together the peanut butter, butter and brown sugar until light and fluffy. Beat in the eggs one at a time then stir in 2 teaspoons vanilla.
- Mix in the flour mixture alternately with 3/4 cup (190ml) milk, mixing just until incorporated. Pour batter into prepared pan.
- Bake in the preheated oven for 40 to 50 minutes or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool in pan.
- To make Peanut Butter icing: In a large bowl cream peanut butter then gradually beat in half of icing sugar.
- Add remaining icing sugar alternately with 1 cup of milk; beating until smooth enough to spread. Mix in 1 teaspoon vanilla.
- Spread icing on top of cake and sprinkle with peanuts.

1 cup of milk to 1 lb confectionery sugar is too much. Use about 1/4 cup of milk to get a creamy spreadable frosting. Mix peanut butter with confectionery sugar than add as much milk to make creamy instead of alternating - 07 Aug 2007 (Review from Allrecipes USA and Canada)
