Blueberry and Oat Muffins

    These have a great texture and stay moist and tender for days - if they last that long at your house!

    Serves: 12 

    • 1 1/4 cups (185g) quick cooking oats
    • 1 cup (125g) plain flour
    • 1/3 cup (90g) white sugar
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 cup (250ml) milk
    • 1 egg
    • 1/4 cup (60ml) vegetable oil
    • 1 cup blueberries, rinsed and drained

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Combine oats, flour, sugar, baking powder and salt. Mix in milk, egg and oil; mix just until dry ingredients are moistened. Fold in blueberries.
    2. Fill greased muffin cups 2/3 full with batter.
    3. Bake at 220 degrees C for 20 to 25 minutes.

    This were super easy to make, and are really nice. I used frozen blueberries and standard oats, and it worked fine. I was a bit dubious about using a whole tablespoon of baking powder, but faithfully followed the recipe and sure enough it worked out fine! Will see if i can upload a piccie!  -  11 Oct 2010


    Used different ingredients. I used standard oats not quick cooking oats, and frozen blueberries not fresh - worked fine!  -  11 Oct 2010


    Yum! And not too sweet. Added some chopped banana and reduced the sugar (I used raw) to 1/4 of a cup.  -  01 Aug 2017
