Mango Spiced Beef Skewers

    This is a simple but delicious beef skewer seasoned with sweet mango and assorted spices. Enjoy with your favourite salad.

    Ingredients
    Serves: 10 

    • 1/4 cup (60ml) Dijon mustard
    • 1/4 cup (60ml) honey
    • 1/4 cup (60ml) mango jam
    • 1/2 cup (125ml) apple juice
    • 1/4 cup (60ml) teriyaki sauce
    • 1 tablespoon honey
    • 1/2 cup (125ml) mango jam
    • 1 clove garlic, crushed
    • 1 teaspoon cayenne pepper
    • 1 teaspoon sea salt
    • 1/2 teaspoon ground black pepper
    • 2 tablespoons olive oil
    • 500g steak, sliced across the grain 1cm thick
    • 10 bamboo skewers, soaked in water for 20 minutes

    1. Stir together Dijon mustard, 1/4 cup honey and 1/4 cup mango jam in a small bowl to make a dipping sauce; set aside.
    2. Whisk together the apple juice, teriyaki sauce, 1 tablespoon honey, 1/2 cup mango jam, garlic, cayenne pepper, salt and black pepper in a bowl until blended. Add sliced steak and toss to coat. Set aside to marinate 10 minutes.
    3. Preheat a barbecue for medium-high heat and lightly oil grate.
    4. Remove the steak from the marinade and discard the remaining marinade. Thread the steak strips onto the soaked skewers.
    5. Cook on the preheated barbecue to preferred doneness; about 1 minute on each side for medium.
    6. Serve accompanied by the Dijon dipping sauce.

    This recipe was delicious!!! I changed it up a little bit by alternating fresh apple and mango slices on the skewers. Also, next time I believe I will add a little more mustard and cayenne pepper to the dipping sauce. All in all, this was great!  -  03 Jul 2008  (Review from Allrecipes USA and Canada)

    This was good! I'll have to admit I had to drive to 4-5 different stores before finding the mango preserves (spread) which I finally found at a Whole Foods store. I think the cayenne was a bit too much of spice tho. I will make this again but will add in some mushrooms, peppers, etc., and make some kabobs.
