This topping has a very rich flavour and is good with ice cream, plain cakes and chicken or fish if you have a sweet tooth.

I was looking for a way to use some mangoes that were ripening faster than I could eat them. This was easy and worked well as a pancake topping. Had no OJ so substituted passion fruit juice for a little more tropical taste.
