    Pureed ripe mango mixed with eggs and milk to make a tasty custard with a hint of lime. This delicious custard is baked into a prepared pie shell for an easy dessert.

    Serves: 8 

    • 1 22cm pie shell, baked
    • 2 cups pureed mango
    • 1 tablespoon fresh lime juice
    • 1/4 cup (60ml) evaporated milk
    • 1/4 cup (30g) sifted plain flour
    • 3/4 cup (150g) white sugar
    • 1/2 teaspoon ground cinnamon
    • 2 eggs, whisked

    1. Preheat oven to 180 degrees C.
    2. In a large bowl mix together pureed mango, lime juice and evaporated milk. In a separate bowl thoroughly mix flour, sugar and cinnamon.
    3. Gently stir flour mixture into mango mixture. Combine until smooth then mix in whisked eggs. Pour mixture into pie shell. Bake in preheated oven for 30 minutes. Chill before serving.
