Mango Chicken Kebabs

    Marinated chicken with pieces of juicy mango skewered are cooked on the BBQ. Serve with a mango chutney or plain. Great for summer. Enjoy!

    Serves: 4 

    • 1/4 cup (60ml) olive oil
    • 2 teaspoons grated fresh ginger
    • 1 teaspoon lemon juice
    • 1 teaspoon orange juice
    • 1 teaspoon brown sugar
    • 1 pinch white sugar
    • 4 skinless, boneless chicken breast halves - cut into bite-size pieces
    • 1 pinch salt to taste
    • 3 mangoes - peeled, seeded and diced
    • 4 skewers

    Preparation:15min  ›  Cook:15min  ›  Extra time:30min marinating  ›  Ready in:1hour 

    1. In a shallow container mix the olive oil, ginger, lemon juice, orange juice, brown sugar and white sugar. Place the chicken breasts in the mixture and marinate at least 30 minutes in the refrigerator.
    2. Preheat the BBQ for high heat. Season chicken with salt then alternately thread chicken and mango onto skewers. Discard marinade.
    3. Lightly oil the BBQ grate. Place skewers on the BBQ and cook 15 minutes turning to cook on all sides until chicken juices run clear.
