Macadamia Nut Lemon Drops

    Sweet and just a little tart these biscuits are a lovely little treat. For best results do not bake the biscuits in hot and humid weather and be sure to line baking trays with baking paper to prevent the biscuits from sticking.

    Serves: 24 

    • 1 1/2 cups chopped macadamia nuts
    • 2 eggs
    • 1 1/3 cups (220g) packed brown sugar
    • 1/2 cup (60g) plain flour
    • 1 pinch salt, to taste
    • 1/4 teaspoon baking powder
    • 3 teaspoons lemon zest
    • 2 teaspoons fresh lemon juice

    1. Preheat oven to 180 degrees C.
    2. Spread macadamia nuts on baking tray and bake until lightly browned. Set aside and let cool.
    3. In a large bowl whisk eggs until light and fluffy (this should take at least 5 minutes). Gradually add sugar and whisk well. Sift together the flour, salt and baking powder and blend into egg mixture. Mix until smooth.
    4. Mix in the lemon zest, lemon juice and nuts. Mix until well blended.
    5. Drop by teaspoonfuls about 7cm apart on baking paper lined baking trays. Bake for 7 to 9 minutes until biscuits are golden with dark edges. Let cool on wire rack.

    I think the measurements must be wrong on this recipe. The dough came out very runny. When I tried to bake it, the cookies ran together on the parchment paper. They turned out to be very sticky,chewy, and not tasting like lemon. I ended up adding a lot more flour to the rest of the batter which helped a little. I think if I had switched the amounts of flour and brown sugar listed in the recipe and added more lemon juice & zest, it would probably have turned out better.  -  09 Jul 2004  (Review from Allrecipes USA and Canada)


    Someone made Lemon Macadamia Nut Cookies for me once a long time ago, which is why I tried this recipe. I didn't read the reviews first, and just made it as written. First batch became one huge uncooked cookie. Then I read the reviews and tried adding more flour, and already put more lemon than asked for.
