Macadamia Nut Yellowfin Tuna

Macadamia nut and ginger are natural flavours to complement Yellowfin tuna. Use any type of firm fish that you have available in your area. Be sure it is fresh or freshly thawed with no bones or skin.

Serves: 2 

  • 500g Yellowfin tuna fillets
  • 1 cup macadamia nuts
  • 60g unsalted butter
  • 2 tablespoons grated gingerroot

  1. Preheat oven to 200 degrees C. Lightly grease a baking tray large enough for the fillets without them being crowded.
  2. Finely chop the macadamia nuts in a food processor. Pour onto a plate.
  3. Melt the butter with the ginger in the microwave for a few seconds. Generously brush the fillets with the ginger butter on both sides.
  4. Press each fillet onto the chopped nuts on both sides then place in the baking dish.
  5. Bake for 5 minutes per centimetre of thickness. The nuts should be a golden brown but do not let it burn. Serve immediately.
