These banana muffins have no oil or butter added. They don't need it! The recipe makes great muffins without the greasy bottoms. The walnuts are optional.

3/4 cup (185g) white sugar
1 teaspoon bicarbonate of soda

Preheat oven to 180 degrees C. Lightly grease or line a 10-hole muffin pan.
In a medium bowl combine eggs and bananas. In a separate bowl mix together flour, salt, sugar and bicarbonate of soda. Stir banana mixture into flour mixture. Fold in walnuts if desired. Pour batter into prepared muffin cups.
Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted into centre of a muffin comes out clean.
