    This cake is also known as Jamaica Cake. The cake is made right in the pan; no extra dishes to mess up and very good.

    Serves: 14 

    • 2 cups (250g) white sugar
    • 1 1/2 cups (375ml) vegetable oil
    • 1 1/2 cups (185g) diced pecans
    • 3 cups (375g) plain flour
    • 2 bananas, peeled and diced
    • 3 eggs
    • 600g crushed pineapple with juice
    • 1 teaspoon vanilla essence
    • 1 teaspoon salt
    • 1 teaspoon bi carb soda

    1. Mix together sugar, vegetable oil, pecans, flour and bananas in a 20 x 30 cm tin. Stir in the eggs, pineapple (with juice), vanilla, salt and bi carb soda. Mix well. Do not mash the bananas.
    2. Bake in a preheated 180 degrees C oven for 60 minutes or until cake tests done.
