    This cake is also known as Jamaica Cake. The cake is made right in the pan; no extra dishes to mess up and very good.

    Ingredients
    Serves: 14 

    • 2 cups (250g) white sugar
    • 1 1/2 cups (375ml) vegetable oil
    • 1 1/2 cups (185g) diced pecans
    • 3 cups (375g) plain flour
    • 2 bananas, peeled and diced
    • 3 eggs
    • 600g crushed pineapple with juice
    • 1 teaspoon vanilla essence
    • 1 teaspoon salt
    • 1 teaspoon bi carb soda

    Directions
    Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

    1. Mix together sugar, vegetable oil, pecans, flour and bananas in a 20 x 30 cm tin. Stir in the eggs, pineapple (with juice), vanilla, salt and bi carb soda. Mix well. Do not mash the bananas.
    2. Bake in a preheated 180 degrees C oven for 60 minutes or until cake tests done.

    My whole family loves this cake, they even request it for birthdays etc.! I top the cake with coconut before baking and add a tsp. of cinnamon to the batter for extra flavor. This is my favorite cake to make and eat.  -  25 Jan 2001  (Review from Allrecipes USA and Canada)

    I made a few changes, I used applesauce in place of oil and used half brown sugar and half white sugar as previously suggested. I am not sure if the changes changed the texture...the texture was somewhat fudgy(?) definitely not cake-like. I also greased my pan and dusted it with cinammon and sugar. Yummy! Yummy!     I have made this a few times now, and it is always a hit. I followed some of the previous suggestions and put half brown sugar and half white sugar. I also added cinnamon and cut back the oil.
