    Fresh zucchini, onions and tomatoes sauteed with Italian seasonings make a perfect complement to any meal. Serve alone or over rice.

    Serves: 4 

    • 1/2 cup (125ml) olive oil
    • 1 small white onion, sliced into thin wedges
    • 1 (400g) tin diced tomatoes with juice
    • 2 zucchinis, sliced
    • 1/2 tablespoon Italian herb mix
    • 1 tablespoon salt
    • 1 teaspoon sugar

    1. Heat the olive oil in a frypan over medium heat. Stir in onion and cook until tender.
    2. Mix in tomatoes with juice and zucchini. Season with Italian herb mix and salt. Cook and stir until zucchini is tender. Mix in sugar and adjust seasonings to taste.
