Spicy Chicken Fajitas

    Boneless skinless chicken thighs are used in this recipe because they tend to be more flavourful than chicken breast. Serve with tortillas and trimmings.

    Serves: 5 

    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon cider vinegar
    • 1 tablespoon soy sauce
    • 1 teaspoon chilli powder
    • 1 clove garlic, crushed
    • 1 dash hot pepper sauce, such as Tabasco
    • 750g boneless, skinless chicken thighs, cut into strips
    • 1 tablespoon vegetable oil
    • 1 onion, thinly sliced
    • 1 green capsicum, sliced
    • 1/2 lemon, juiced

    1. In a medium bowl, combine Worcestershire sauce, vinegar, soy sauce, chilli powder, garlic and hot pepper sauce. Place chicken in sauce, and turn once to coat. Marinate for 30 minutes at room temperature, or cover and refrigerate for several hours.
    2. Heat oil in a large frying pan over high heat. Add chicken strips and stir fry for 5 minutes. Add the onion and capsicum and cook for 3 minutes. Remove from heat, and sprinkle with lemon juice.

    Used different ingredients. This is the best fajitas recipe I have found. I substituted about 1/2 T of lime (instead of the lemon) and added it to the marinade. I also let the meat simmer in the juices - this makes sure that it won't be dry but juicy instead.  -  18 Jul 2008

    Probably not as authentic as the fajitas I have had in TexMex restaurants however it was pretty tasty and my fussy little kids liked the chicken which is a plus in my book.  -  17 Aug 2009
