Chicken Tomatillo Stew
Tomatillos, sometimes called husk tomatoes, are simmered with onion and coriander before adding cooked chicken. Serve over white rice.

- 1 tablespoon vegetable oil
- 1 onion, sliced
- handful chopped fresh coriander
- 220g tomatillos, puréed
- 375g chicken meat, cooked and cubed or shredded
- 1/3 cup chicken stock

- Heat oil in a pan over medium heat. Add onion and cook until soft, then stir in coriander and tomatillos. Season with salt and pepper to taste. Reduce heat to low and simmer for 3 to 5 minutes.
- Add cooked chicken and stock, mix all together and heat through (do not over-stir the chicken). Serve hot.
