This is an easy and tasty chicken dish with juicy cherry tomatoes and olives. It makes a great weeknight meal.

Serves: 4 

  • 1kg skinless, boneless chicken breast halves - cut into strips
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 3/4 cup (190ml) dry white wine
  • 1 cup cherry tomatoes
  • 1/4 cup pimento-stuffed green olives
  • salt and pepper to taste

  1. Season chicken with salt and pepper.
  2. In a frypan, saute minced garlic in olive oil over medium heat. Add chicken breast strips and brown.
  3. Reduce heat to low. Add wine, cover and simmer for 35 minutes.
  4. Add olives and let simmer for 10 minutes more. When ready to serve add cherry tomatoes for a minute or two. They should not get mushy or split open, just get warm. Serve immediately.
