    A lovely apple cake with a lots of apples and extra special flavour from walnuts, coffee, lemon and spices. A nice morning tea or special occasion cake.

    Ingredients
    Serves: 14 

    • 2/3 cup (150g) butter, softened
    • 3/4 cup (125g) packed brown sugar
    • 3 eggs
    • 3/4 cup (250g) honey
    • 2 teaspoons finely grated lemon rind
    • 1/2 cup strong brewed coffee
    • 2 cups (250g) plain flour
    • 1 1/2 cup (190g) wholemeal flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 3/4 teaspoon ground nutmeg
    • 2 cups apples, peeled, cored and diced
    • 1/2 cup (50g) coarsely chopped walnuts

    1. Preheat the oven to 180 degrees C.
    2. In a large bowl, cream the butter with the brown sugar. Beat in the eggs, then the honey, lemon rind and coffee.
    3. In another bowl, stir together the flours, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg. Beat into the creamed mixture. Stir in the apples and walnuts.
    4. Turn the batter into a greased ring tin. Bake the cake for 1 hour and 10 minutes, or until it tests done with a toothpick. Let cool on a rack.

    I did not add the apple into the cake, instead I peeled one apple and shaved half of it onto the top before baking. I also felt it was missing something so I made an orange glaze which improved it a lot! This cake is DELICIOUS after adding the orange glaze. (1/4 cup butter, 2/3 cup white sugar, 1/3 cup orange juice in small saucepan over medium heat, stir frequently until sugar and butter dissolve.
