These biscuits are fruity and delightful....very delicious. They are full of fruit and nuts - bananas, apricots and almonds.

Serves: 24 

  • 1 1/2 cups (125g) rolled oats
  • 1/2 cup oat bran cereal
  • 1/4 teaspoon salt
  • 1/3 cup (85ml) vegetable oil
  • 2 bananas, mashed
  • 1/2 cup (60g) finely chopped almonds
  • 1 1/2 cups dried apricots, chopped
  • 1 teaspoon vanilla essence

Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Preheat oven to 180 degrees C. Grease baking trays.
  2. In large bowl, combine oil, bananas and vanilla until smooth. Mix in oats, oat bran cereal and salt. Fold in apricots and almonds. Drop dough by spoonfuls 5cm apart on baking trays.
  3. Bake for 20 to 25 minutes in the preheated oven until edges are light brown.
