Spicy Peanut Chicken and Capsicum Satay Skewers
Lovely satay style chicken skewers which can be done either on the barbecue or under the grill. They need to marinate for four hours for best results.
Ingredients

- 1/2 cup (150g) crunchy peanut butter
- handful chopped fresh coriander
- 185g salsa
- 4 tablespoons soft dark brown sugar
- 7 tablespoons soy sauce
- 1 tablespoon salt
- 4 tablespoons lemon juice
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons crushed garlic
- 1/2 bunch spring onions, chopped
- 3 skinless, boneless chicken breast halves, cut into strips
- 2 green capsicums, seeded and chopped

- In a large mixing bowl, combine peanut butter, coriander, salsa, sugar, soy sauce, salt, lemon juice, cayenne pepper, black pepper, garlic and spring onions. Mix well. Add chicken, cover and refrigerate for at least 4 hours.
- While the chicken is marinating, soak bamboo skewers in water for one hour so they will not burn on the barbecue.
- Preheat the barbecue to a high heat or preheat the griller.
- Thread chicken alternately with capsicum onto skewers. Barbecue turning once, for 4 to 6 minutes or grill until browned and cooked through.

I was a bit doubtful due to the ingredients but was hopeful four other cooks couldn't be wrong. Wow it is an awesome dish. Would be great fingerfood for a party! Thanks for sharing!!!! (I swapped the dark brown sugar for brown sugar but only because I didn't have the dark brown sugar in the pantry) I grilled them on high for 15 minutes - they were moist, tender and delicious!!!!! - 03 May 2011
Something else. This was one of the best chicken recipes i've ever made. interesting combination of ingredients, but the end result is perfect. I baked mine in the oven and it came out great. - 08 Oct 2008
