Peanut Butter Fudge (Vegan)

    This easy, vegan peanut butter fudge is delicious and so easy to make! Great as a light dessert or snack.

    Serves: 24 

    • 170g vegan margarine (eg Nuttelex)
    • 1 cup (230g) peanut butter
    • 3 2/3 cups (570g) icing sugar

    1. Lightly grease a 23x23cm baking dish.
    2. In a saucepan over low heat, melt margarine. Remove from heat and stir in peanut butter until smooth. Stir in icing sugar a little bit at a time until well blended. Pat into prepared tin and chill until firm. Cut into squares.

    I was shocked at how quick and easy this recipe was! I reduced the sugar to 2 1/2 cups, and could have gone with 2 or 2 1/4. At 2, it was still very creamy. At 2 1/2, it was very thick and probably didn't need to be refridgerated to thicken. In any case, it was so easy and SO GOOD! We LOVE it! I recommend it to all peanut butter fudge lovers.
