Using premade cheese tortellini you can make this super easy and zesty meal in no time. Delicious and healthy!

Serves: 8 

  • 1 tablespoon olive oil
  • 1 small red onion, chopped
  • 1 zucchini, chopped
  • 1 tablespoon minced garlic
  • 1 (810g) tin crushed tomatoes
  • 850ml chicken stock
  • 1 tablespoon white sugar
  • 1 tablespoon Italian seasoning
  • 1/4 cup (65ml) red wine
  • 1 dash Tabasco sauce
  • 310g tinned corn kernels, undrained
  • 1/2 cup (30g) freshly grated Parmesan cheese
  • 230g cheese tortellini

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. In a large pot over medium heat, cook onion, zucchini and garlic in oil for three minutes until onion is translucent. Stir in crushed tomatoes, stock, sugar, Italian seasoning, wine and Tabasco sauce and bring to a boil.
  2. Reduce heat and stir in corn and Parmesan. Simmer 30 minutes.
  3. Stir in tortellini and simmer 10 minutes more, until pasta is tender.
