Chocolate and Banana Brownies

    A small banana is added to this basic brownie recipe for a hint of banana flavour. This is a fudge brownie and it does not rise much. Add 1/2 cup chopped nuts for more flavour. No mixer required!

    Serves: 16 

    • 125g butter
    • 2/3 cup dark chocolate chips
    • 1 large egg
    • 2/3 cup (100g) packed brown sugar
    • 1 small ripe banana, mashed
    • 1/2 teaspoon vanilla essence
    • 1/4 teaspoon salt
    • 3/4 cup (90g) plain flour

    1. Preheat an oven to 170 degrees C. Grease a 20cm square tin.
    2. Melt butter in a saucepan over medium-low heat. Remove from heat, add choc chips and stir until melted. Set aside to cool for 5 minutes.
    3. Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana, vanilla and salt. Pour the melted chocolate mixture into the banana mixture and stir until well combined. Add the flour, stirring just until incorporated. Spread the batter into the prepared tin.
    4. Bake in the preheated oven until a toothpick inserted near the centre comes out with moist crumbs, about 30 minutes. Don't over cook. Remove and cool tin on wire rack before cutting.

    An awesome recipe! Admittedly I used white chocolate (it was all i had in the house!) and doubled the recipe but it was easy to make and very more-ish to eat!! Thanks for this one!  -  06 Feb 2012
