Tuna Melt a la Pixi

A simple & quick recipe. The perfect snack to eat just before going out!
1 small tin of tuna, drained
6-8 slices of cheddar cheese
2 slices bread
- Toast one slice of the bread. When toasted, put half the tin of tuna on the bread, then put 3 or 4 slices of cheese on the tuna so it's covered.
- Cook under the griller until the cheese has melted.
- Take out of grill, add the rest of tuna & cheese as before and cook again untill the second lot of cheese is bubbling.
- Add the second slice of bread on the top & grill until it browns. Slice in half to eat.
Quick and easy lunch! The melted cheddar was really good with the albacore white tuna. I did add a little mayo to the bread so the tuna wouldn't be dry.
