Coconut and Macadamia Biscuits

    This is such an easy recipe to make. I use my food processor to mix with the dough blade.

    Makes: 72 biscuits

    • 125g butter, softened
    • 1 cup (220g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1/2 cup sour cream
    • 2 1/2 cups (250g) plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 2 cups (100g) shredded coconut
    • 1 1/2 cups (170g) chopped macadamia nuts

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Preheat oven to 180 degrees C.
    2. In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time then stir in the vanilla and sour cream. Combine the flour and bicarb soda; stir into the creamed mixture until well blended. Use a wooden spoon to stir in the coconut and macadamia nuts. Drop dough by rounded teaspoons 5cm apart onto ungreased baking trays.
    3. Bake for 10 to 12 minutes in the preheated oven until edges are golden brown. remove biscuits from baking trays to cool on wire racks.

    I recalculated the recipe in order to make 36 cookies, so that may have altered the outcome. The flavor of the cookie is great (might use a little bit more sugar next time though) but the texture is a little weird. It's more like a cake than a cookie.
