    This chocolate cake recipe is very moist and rich. I have also made it in mini loaf tins as Christmas presents.

    Serves: 12 

    • 3 eggs
    • 2 cups (440g) white sugar
    • 250g butter, softened
    • 1/2 cup (125ml) water
    • 2 1/4 cups (280g) plain flour
    • 2 tablespoons cocoa powder
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground allspice
    • 1/2 cup dark chocolate chips
    • 2 cups grated apple
    • 1 tablespoon vanilla essence

    1. Preheat the oven to 180 degrees C. Grease and flour a 25cm springform cake tin.
    2. Cream together until fluffy the eggs, sugar, butter and water.
    3. In another bowl, sift together the flour, cocoa, bicarb soda and spices.
    4. Add dry ingredients to creamed mixture and mix well.
    5. Fold in chocolate chips, apple and vanilla essence. Stir until these ingredients are evenly distributed.
    6. Spoon into the prepared cake tin. Bake for 60 to 70 minutes until cake tests done.
