    Macadamias and white chocolate chips combine in a dark chocolate cookie base to create these wonderful cookies perfect for any coffee break.

    Makes: 24 biscuits

    • 55g dark cooking chocolate
    • 115g butter, softened
    • 1 cup (220g) brown sugar
    • 1 egg
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1 cup (180g) white chocolate chips
    • 3/4 cup (100g) chopped macadamia nuts

    1. Preheat oven to 180 degrees C. Lightly grease baking trays or line with baking paper.
    2. Melt dark chocolate in top of double boiler over hot, not boiling water. Remove from heat; let cool.
    3. Cream butter, melted chocolate and sugar in large bowl until blended. Add egg and vanilla; beat until light. Blend in flour, bicarb soda, white chocolate chips and macadamia nuts.
    4. Drop dough by rounded teaspoonfuls 5cm apart onto prepared baking trays. Bake 10 to 12 minutes or until firm. Be careful not to over bake. Remove to wire racks to cool.
