Preheat oven to 190 degrees C. Sift together flour, bicarb soda and salt.
Stir together white sugar, brown sugar, apple sauce, vanilla essence and egg white until smooth. Combine the flour, bicarb soda and salt; stir into the batter until moistened. Mix in chocolate chips last. Drop dough by rounded teaspoonfuls onto an ungreased baking tray.
Bake in preheated oven until golden brown, 8 to 10 minutes.
Love them. We used raw sugar instead of white and cut it back a little bit as we didn't need them too sweet, used wholemeal flour instead of plain and olive oil instead of applesauce (because we didn't have any). They are really good and basic, easy for kids to make - an awesome recipe. We doubled our mixture but totally understand why you wouldn't.
