Chocolate and Banana Muffins

    Chocolate and bananas, two great tastes that go together! These are easy to make and will be eaten quickly!

    Makes: 12 muffins

    • 1 1/2 cups mashed bananas
    • 2/3 cup (170ml) sunflower oil
    • 1 egg, beaten
    • 1 1/2 teaspoons vanilla essence
    • 2 cups (250g) plain flour
    • 1/2 cup (110g) white sugar
    • 2 tablespoons cocoa powder
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 cup dark chocolate chips

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat oven to 220 degrees C. Lightly grease a 12-cup muffin tin.
    2. In a medium bowl, blend the banana, oil, egg and vanilla together.
    3. In a large bowl, combine the flour, sugar, cocoa, baking powder and salt. Stir in the banana mixture until just blended. Fold in the chocolate chips. Spoon the batter into the prepared muffin tin, filling 3/4 full.
    4. Bake in the preheated oven for 15 to 20 minutes. Remove muffins to a wire rack to cool completely.

    I found this recipe to be dry, i had to add some milk and an extra egg to moisten up the mix..... Needs some work.  -  25 Feb 2013


    This recipe is awesome. I did change some things: I used Whole Wheat flour (With the Cocoa color, you cant even tell, if youve got picky eaters), and I used half the oil . I made up the 1/3c difference with milk. I also added a handful of walnuts.
