Chickpeas get a lift when tossed with grated coconut, fresh coriander and lemon juice. Serve this salad along with your favourite curry or at your next barbecue. My mum made this all summer long!


Serves: 4 

  • 1 (400g) can chickpeas, rinsed and drained
  • 1/3 cup freshly grated coconut
  • 1 teaspoon chopped green chillies
  • 1/3 cup chopped fresh coriander
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt

  1. Combine chickpeas, coconut, green chillies and coriander in a large bowl. Stir in lemon juice and season with salt. Refrigerate for 2 hours before serving for best flavour.

Grated Coconut

Frozen grated coconut is available in many Indian food shops.
