Cheese and Chickpea Salad

    This salad works great for snacks, lunches and barbecues! It's filling and tasty!

    Serves: 6 

    • 550g tinned chickpeas, drained
    • 4 spring onions, finely chopped
    • 1 green capsicum, diced
    • 1 red capsicum, diced
    • 1 tablespoon dried chives
    • 1 tablespoon dried dill
    • 1 cup (140g) Havarti cheese, cubed
    • 1 tablespoon red wine vinegar
    • 1/4 cup (65ml) olive oil
    • 1 pinch salt and pepper to taste
    • 2 teaspoons chopped fresh parsley

    1. Mix the chickpeas, spring onions, green capsicum, red capsicum, chives, dill and Havarti cheese in a large bowl.
    2. Whisk the red wine vinegar, olive oil, salt and pepper together in a separate bowl; pour the mixture over the salad and toss to coat. Sprinkle parsley over the salad to garnish.

    Havarti Cheese

    Gouda cheese may be substituted for the Havarti.
