My husband and I are trying to add more variety to our diets and cut back on red meat, so I came up with this chicken mince burger and it is delicious! I used my George Foreman grill to cook them. I served them with the spicy baked sweet potato chips found on this Website. They make a nice substitution for the usual burger and chips.
500g chicken mince
1/2 small onion, diced
1 teaspoon minced garlic
1/2 (35g) packet taco seasoning mix
1 pinch salt and pepper, to taste
4 wholemeal bread rolls, toasted
4 slices cheese
1 avocado - peeled, pitted and sliced
1/4 cup sliced jalapenos
1/2 cup salsa, or to taste

Preheat barbecue for medium-high heat. Lightly oil barbecue grate and place about 10cm from heat source.
Mix the chicken mince, onion, garlic, taco seasoning and egg together in a bowl until thoroughly blended. Season with salt and pepper to taste. Divide chicken mixture evenly and form into 4 soft patties.
Cook the chicken patties on the preheated barbecue until meat is no longer pink and juices run clear, 5 to 8 minutes per side depending on thickness. To serve, place each patty on one half of a bread roll, top with a slice of cheese, avocado slices and desired amounts of jalapenos and salsa. Cover with remaining half of roll.
