Mexican Chicken Burgers

    My husband and I are trying to add more variety to our diets and cut back on red meat, so I came up with this chicken mince burger and it is delicious! I used my George Foreman grill to cook them. I served them with the spicy baked sweet potato chips found on this Website. They make a nice substitution for the usual burger and chips.

    Serves: 4 

    • 500g chicken mince
    • 1/2 small onion, diced
    • 1 teaspoon minced garlic
    • 1/2 (35g) packet taco seasoning mix
    • 1 egg
    • 1 pinch salt and pepper, to taste
    • 4 wholemeal bread rolls, toasted
    • 4 slices cheese
    • 1 avocado - peeled, pitted and sliced
    • 1/4 cup sliced jalapenos
    • 1/2 cup salsa, or to taste

    1. Preheat barbecue for medium-high heat. Lightly oil barbecue grate and place about 10cm from heat source.
    2. Mix the chicken mince, onion, garlic, taco seasoning and egg together in a bowl until thoroughly blended. Season with salt and pepper to taste. Divide chicken mixture evenly and form into 4 soft patties.
    3. Cook the chicken patties on the preheated barbecue until meat is no longer pink and juices run clear, 5 to 8 minutes per side depending on thickness. To serve, place each patty on one half of a bread roll, top with a slice of cheese, avocado slices and desired amounts of jalapenos and salsa. Cover with remaining half of roll.

    WOW! These were really good burgers. A little hard to handle, and not very pleasing to look at but the taste was 5 stars, easily. EDIT: Wet your hands before you make the patties this helps with the sticky meat.  -  21 Jun 2009  (Review from Allrecipes USA and Canada)


    Totally great! I did add bread crumbs as well. Very moist burger with lots of flavour from the taco seasoning. Great too with the avacado and salsa.
