    Yummy banana and coconut icing with pecans.

    Ingredients
    Serves: 12 

    • 125g butter, softened
    • 4 cups (620g) icing sugar
    • 1 medium banana, mashed
    • 1 cup (45g) shredded coconut
    • 1 cup (115g) chopped pecans
    • 1 teaspoon vanilla essence

    1. Cream together the softened butter and icing sugar until light and fluffy. Add the banana, coconut, pecans and vanilla and mix well. Makes enough to fill and ice a 23cm layer cake or one 23x33 cm rectangular cake.

    Great tasting icing - we did not have cream cheese to make traditional icing and this worked very well. Easy for the kids to make as well. - 25 Jan 2011
