Makes: 12 muffins
2 cups (250g) plain flour
1/3 cup (75g) white sugar
2 tablespoons cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
2/3 cup (170ml) canola oil
1 egg, beaten
1 cup dark chocolate chips

In a large bowl combine the flour, sugar, cocoa powder and baking powder.
In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin tray, filling three-quarters full.
Bake in a preheated 220 degrees C oven for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.
