Banana Sandwich Cake with Cream Cheese Icing

Serves: 12 

  • Cake
  • 1 cup (220g) white sugar
  • 2 cups (250g) plain flour
  • 2 teaspoons bicarb soda
  • 1/2 cup (125ml) water
  • 1 cup mashed bananas
  • 1 pinch salt
  • 1 cup mayonnaise
  • Cream Cheese Icing
  • 230g cream cheese
  • 250g butter, softened
  • 4 cups (620g) icing sugar
  • 2 teaspoons vanilla essence
  • 3/4 cup (85g) chopped walnuts

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Cake: Preheat oven to 180 degrees C. Lightly grease two 22cm round cake tins.
  2. Combine sugar, flour, bicarb soda, water, mashed bananas, salt and mayonnaise. Mix together and pour into the cake tins.
  3. Bake cake about 45 minutes or until a toothpick inserted in the centre comes out clean. Remove from oven and cool on wire racks.
  4. Cream Cheese Icing: In a mixing bowl, blend cream cheese and butter or margarine together. Gradually add sugar and vanilla then mix well. Stir in walnuts.
  5. To Assemble: Fill and ice the cake.
