    This recipe is moist and flavourful! The coconut, apples and sultanas are a wonderful flavour combination that works surprisingly well.

    Ingredients
    Serves: 14 

    • 1 cup (250ml) vegetable oil
    • 125g butter, softened
    • 1 1/2 cups (330g) white sugar
    • 3 eggs
    • 3 cups (375g) plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 1/2 teaspoon vanilla essence
    • 2 cups (280g) diced apple without peel
    • 1 cup dessicated coconut
    • 1 cup sultanas
    • 1 cup chopped walnuts
    • Icing
    • 1 cup brown sugar
    • 125g butter
    • 1/4 cup (65ml) milk

    Directions

    1. Preheat oven to 170 degrees C. Grease and flour one 25cm ring tin.
    2. Combine oil, butter and sugar together then beat well with a mixer. Add eggs, flour, bicarb soda, salt and vanilla then mix well. Stir in apples, coconut, sultanas and walnuts. Pour batter into the prepared tin.
    3. Bake for 90 minutes. Remove cake from oven. Let it cool in the tin for a few minutes and then remove from tin.
    4. Icing: In a small saucepan heat brown sugar, butter and milk. Bring mixture to boil and stir for 1 minute. Pour over the warm cake.

    I added 1 1/2 teaspoons cinnamon, 3/4 teaspoons ground cloves and 3/4 teaspoons ground allspice. I also sprinkled additional walnuts on top before baking. Awesome!  -  20 Feb 2011  (Review from Allrecipes USA and Canada)
