This is a tasty cake that keeps well and is quite easy to make. Great as an afternoon snack with coffee.

Serves: 24 

  • 1 cup (250ml) vegetable oil
  • 2 eggs
  • 2 cups (440g) white sugar
  • 2 cups (250g) plain flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon bicarb soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla essence
  • 4 cups (560g) diced apple without peel

Preparation:30min  ›  Cook:40min  ›  Extra time:10min cooling  ›  Ready in:1hour20min 

  1. Preheat oven to 180 degrees C. Lightly grease and flour one 20x30cm cake tin.
  2. Beat vegetable oil and eggs until foamy. Add the sugar, flour, ground cinnamon, bicarb soda, salt and vanilla then mix well.
  3. Bake in the preheated oven for 30 to 40 minutes. Cool cake in the cake tin for 10 minutes. This cake needs no icing.
  4. Stir in the diced apples. Pour batter into prepared cake tin.
