Apple Dessert Cake with Creamy Butter Sauce

    This cake is almost like a pudding and makes a great dessert when served warm. Goes well with some fresh cream or vanilla ice cream.

    Serves: 10 

    • Cake
    • 2 large apples
    • 1 cup (220g) white sugar
    • 65g butter or margarine
    • 2 eggs
    • 1 cup (125g) plain flour
    • 1/4 teaspoon salt
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon ground nutmeg
    • 1/2 teaspoon ground cinnamon
    • Sauce
    • 125g butter or margarine
    • 1 cup (220g) white sugar
    • 1/2 cup thickened cream
    • 1 1/2 teaspoons vanilla essence

    1. Cake: Preheat an oven to 180 degrees C. Ready a 23cm glass pie dish.
    2. Peel, core and grate the apples.
    3. Cream together the sugar and butter. Stir in the grated apples and eggs. Sift together flour, salt, bicarb soda, nutmeg and cinnamon. Mix into the apple mixture.
    4. Pour the batter into the pie dish. Bake into the preheated oven for 50 minutes.
    5. Sauce: Place the butter, sugar, cream and vanilla in the top of a double boiler. Heat and stir until the sugar has dissolved and butter has melted. Serve over apple cake.

    I was looking for something "autumny" to match the weather and this sounded good. Although we only had one apple in the house (we added 2 tablespoons oil so it didn't turn out dry), it was awesome!!! I can't wait to try it with 2 apples. I had my hubby take some to my picky next-door neighbor (okay, she's my mother), and she called requesting this as her standing birthday cake from this day forward. My kids didn't like it, but they don't like anything without chocolate or vanilla, so their opinions don't count.     This turned out great! I grated the apples on a cheese grater and used 1 tbl of applesauce to make it extra moist. The sauce was so tasty but it made about twice the amount one would possibly need on this cake.
