Feta and Sun-Dried Tomato Angel Hair Pasta

My husband begs me to make this dish. It is a surprisingly great mixture of flavours. You'll love it! Feel free to tailor the ingredient amounts to your taste. This is how we like it, but it is quite flexible.


Serves: 8 

  • 1 (500g) packet angel hair pasta
  • 1/4 cup (65ml) olive oil
  • 4 cloves garlic, crushed
  • 90g sun-dried tomatoes, softened and chopped
  • 250g tomato basil feta cheese, crumbled
  • 1 cup (115g) grated Parmesan cheese
  • 1 bunch fresh coriander, chopped
  • salt and pepper to taste

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until done; drain. Return pasta to the pot.
  2. Mix in olive oil, garlic, tomatoes, feta and Parmesan cheese. Stir in coriander and season with salt and pepper. Serve warm.

Used different ingredients. I only had plain feta so I mixed up some olive oil, basil, pepper and garlic with that. - 23 Apr 2010


A light tasty pasta that turned out fine. While the coriander seems an odd choice, it works. I would also try it with basil if thats what you have. - 23 Apr 2010
