Muffins (to your taste)

    Simple lite and tasty basic muffin recipe. Love these easy throw together treats. Don't be put off by the sour cream, this is what makes these so lite.

    Makes: 12 Muffins

    • 125 grams butter (melted)
    • 1 cup caster sugar
    • ¾ cup sour cream
    • ¼ cup milk
    • 2 eggs
    • 2 cups self raising flour (sifted)
    • 1 cup blueberries, "fresh is best" (your favorite fruit or ingredient)

    Preparation:10min  ›  Cook:25min  ›  Extra time:5min cooling  ›  Ready in:40min 

    1. Turn oven on to 160 degrees C.
    2. Cream butter & sugar.
    3. Add milk, sour cream & eggs and mix until combined.
    4. Slowly add flour until combined.
    5. Add blueberries and fold into mixture.
    6. Spoon into greased muffin tray.
    7. Bake on middle rack in oven for 25 minutes or until skewer inserted into middle of muffin comes out clean.
    8. Take muffin tray out of oven & allow to cool in tray for approx 5 mins (stops them from going doughy).
    9. Turn out onto cooling rack and allow to cool.


    I have made these with Dates, Date & Ginger, Raspberries, Choc Chips, Banana. "TRY WHATEVER YOU CAN THINK OF"

    Not impressed cooking for 45mins and still not cooked.  -  12 Feb 2011


    These muffins were light, tasty and overall an excellent recipe. I did change the flavour ... see my tweak. My daughter and her friends loved them. Will definitely make again.  -  12 Nov 2010


    Used different ingredients. Blueberries don't agree with me so I used cranberries, macadamias and some orange zest. I also was short of sour cream so I mixed in some Philly cream.  -  12 Nov 2010
