This recipe I pinched from Madhur Jafferries' curry bible. Its super easy and quick and a delicious mix of flavours.

Serves: 3 

  • 3-4 tablespoons oil or ghee
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds (brown)
  • 400g courgettes
  • 1 green capsicum
  • 1 tablespoon ground coriander
  • 1 teaspoon (to taste) salt
  • 2 tablespoon plain unsweetened yoghurt
  • pinch cayenne pepper
  • squeeze lemon juice

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Heat oil then add cumin and mustard seeds once hot. Fry until mustard seeds start to pop.
  2. Add courgettes and capsisum and fry until courgettes are golden brown.
  3. Once courgettes are cooked turn down heat to a low simmer and add yoghurt, cook carefully until yogurt evaporates.
  4. Add coriander and salt and fry gently until mixed through.
  5. Take off heat and garnish with a pinch of cayenne pepper and squeeze of lemon juice.
