Steamed Banana and Coconut Cake

    Excellent and easy dessert or snack. You just can't go wrong with banana and coconut. It's so tropical!

    Serves: 4 

    • 5 large bananas, peeled and mashed
    • 1 cup rice flour
    • 1/4 cup tapioca flour/starch
    • 1/2 cup caster sugar
    • 1/2 tsp salt
    • 1/2 cup coconut milk
    • 3 cups grated fresh coconut

    1. In a large bowl, mix the bananas, rice flour, tapioca starch, sugar, salt, coconut milk and 2½ cups fresh grated coconut.
    2. Place all in a baking tray that will fit into a steamer and sprinkle the remainder of the coconut on top.
    3. Steam for thirty minutes.
    4. Once cooked, turn the cake out from the tray and serve hot or cold in slices.

    Fresh coconut

    You can substitute 2 cups of soaked desiccated coconut if you have trouble finding the fresh. You can also find fresh frozen coconut in Asian supermarkets.
