Green Papaya Salad

A street food classic. I like to serve on a platter with sticky rice to sop up the spicy juices from the salad.


Serves: 4 

  • 1/2 green papaya or pawpaw
  • a good pinch of salt
  • 1 clove garlic
  • 1 tablespoon chopped Thai chillies
  • 2 tablespoons roasted chopped peanuts
  • 1 tablespoon dried shrimp or shrimp paste
  • 1 lime quartered
  • 6 cherry tomatoes halved
  • handful of green beans cut into 2cm lengths
  • 2 tablespoons fish sauce
  • 1 tablespoon palm sugar
  • 1 tablespoon tamarind juice
  • 2 tablespoons lime juice

  1. Peel and grate the green papaya.
  2. Pound the salt, garlic and chillies in a mortar and pestle until well smashed. Add the peanuts and shrimp and pound into a chunky paste.
  3. Add the lime quarters, pound, then add the cherry tomatoes and French beans and pound, crushing them slightly.
  4. Add the green papaya and gently bruise, working the ingredients together. You may need to move it to a bowl for this bit.
  5. Mix in the fish sauce, palm sugar, tamarind juice and lime juice. Adjust the seasoning to your liking.

Dried shrimp and tamarind

These can be bought in Asian shops. Soak the tamarind in water to get tamarind juice.
