Ruby's Tastiest Meatloaf Ever

Laden with hidden vegies and loads of taste , this meatloaf is great cold also ....a tried and tested recipe that is always a winner

Serves: 6 

  • 600grams beef mince
  • 400grams sausage mince
  • 2 free range (please!) eggs
  • 1 large chopped onion
  • 1 medium grated zucchini
  • 1 medium grated carrot
  • 2 large chopped garlic cloves
  • 1 teaspoon chicken stock powder
  • 1/2 cup tomato sauce (secret ingrediant)

Preparation:15min  ›  Cook:1hour  ›  Ready in:1hour15min 

  1. Mix all ingredients together in a large bowl , using clean hands to combine well.
  2. Mould into an oval loaf and bake in the oven for 1 hour on 175 degrees. After 30 mins , baste with pan juices.

Serving suggestion

Delicious with mashed potato and green beans, also yummy the next day cold on sandwiches or with salad. I have a family of 4 and it lasts about 3 days for us, great value and great for kids!!!
