Chocolate Chip Cornflake Cookies

These are my all time favourite biscuit. The recipe comes from my maternal grandmother. I have very fond memories of going on summer holidays to her house and enjoying snacking on these incredibly tasty treats. Crunchy on the outside and chewy in the centre - though be careful, they're addictive and the whole batch will be gone before you know it!

Something else. You can also use baking paper instead of heavily greasing the tray - my grandma swears by the greasing but they turn out just fine on baking paper and don't make as much mess - it's up to you. It usually depends how lazy I'm being as to whether I'll grease or line the trays...

Fab recipe - thanks for sharing. I also make them with dried apricots. Just fantastic as they are here! thank you granny. Have always loved chewy cookies - home made.

Good recipe reminds me of a rock cake but softer a nicer.

These were really delicious! My only tweak would probably be to add more cornflakes as I quickly ran out of them whilst rolling the dough into the uncrushed ones. Also, next time I'll probably to try crushing all of them and mixing them right into the mixture at the end. Overall, well done and thanks for sharing!
