Slow Cooker Beef Vindaloo

    A quick and easy vindaloo recipe that uses a ready-made curry paste and is cooked in the slow cooker. Simple but delicious!

    Serves: 4 

    • 600g beef chuck steak, chopped into 4cm pieces
    • 1 brown onion, chopped
    • 1 (50g) sachet vindloo curry spice paste
    • 1 (400g) tin coconut cream
    • 1 (400g) tin diced tomatoes

    Preparation:10min  ›  Cook:6hours  ›  Ready in:6hours10min 

    1. Place all the ingredients in a 4.5 litre slow cooker.
    2. Cook on low, covered, stirring occasionally, for 5-6 hours or until beef is tender.

    Serving suggestion:

    Serve with steamed basmati rice and a dollop of plain yoghurt.

    This was a very easy dish to prepare. I added a couple of chopped chillis to add a bit more heat and also added in a little Garam Masaala and Curry Powder. Used Vindaloo paste from the Indian supermarket. Served with Poppadums. Yum!  -  03 Aug 2010


    I loved this recipe.. after a string of bad slow cooking for this kitchen phobic Mum.. I had a rip roaring sucess with this recipe. I even dared to alter it slightly but using lite Coconut milk... just to make it a tad healthier! YUMMY!  -  18 Jul 2010
